Alaskan Cod with Roasted Garlic Potatoes

Ingredients

  • 2 Cups panko plain breadcrumbs
  • ½ C chopped fried garlic (see below)
  • 1 T Italian seasoning
  • 1/2 tsp salt ½ tsp pepper
  • 1/2 C + Parmesan cheese

Instructions

Mix all above ingredients together. Beat 2 eggs to dip fish filets in. Rinse and pat the filets dry. Dip each piece in egg and coat well with breadcrumb mixture. Bake in a 400-degree oven on a broiler pan (this helps the heat circulate on both sides of the fish), pre-sprayed with olive oil. Bake for at least 17 minutes. If filets are more than ½ inch thick, cook for 5 minutes longer or until outside is nicely browned and the fish is flaky, but not dry, all the way through. Let sit for 1 minute and serve!
