
Eggplant Spinach Fritters | Easy and Delicious |
An Easy Healthy And Delightful Treat For The Whole Family!
Ingredients
- 1 Eggplant
- 1 Red Bell Pepper
- 1 Onion
- 4 Eggs
- 1 Bunch Of Spinach (cooked & drained first)
- 1 Flour 4 Tbs.
- 1 Olive Oil & Avocado Oil (for fritter frying)
- 1 Yogurt 2 big dollops
- 1 Mayonnaise or Miracle Whip 2 big dollops
- 1 Salt just a little
- 1 Pepper just a little
- 1 Hot Sauce (your favorite) just a little
Instructions
- Chop eggplant into tiny squares place in bowl with cold water and sprinkle a little salt – let soak for approx. 15mins. * Chop all veggies into small pieces. Cook Spinach and drain squeezing out as much water as possible, then chop into small pieces. In a bowl place 4 eggs and scramble, adding 4 Tbs Flour with a little salt, and set this aside. Next lay out the eggplant on a paper towel and dry off. Then fry eggplant for approx. 5 to 8 minutes then add in the onion and next the red bell pepper and stir for approx. 5 mins. Then add in the already cooked Spinach and saute' for another two mins. After all cooked place veggies into egg mixture and stir well. Before frying add in the Pecorino Cheese and stir. Next place about a One to Two inch layer of Avocado oil (good for heat) in pan and scoop in mixture watching closely then turn over when done on one side. When cooked, place on a paper towel for oil draining and serve using the Yogurt/Miracle Whip or Mayonnaise & hot sauce.
