Chicken Cacciatore

Ingredients

  • 1 whole cut-up chicken
  • 1 large can diced tomatoeswith juice
  • 1 white onion sliced instrips.
  • 1 1/2 cups of canned orfresh sliced mushrooms
  • ½ of a yellow and
  • ½ of an orange bell pepperboth cut into thin strips several cloves of crushed garlic
  • 1 -2 Tbs. of Italianseasoning (basil, rosemary, thyme, Italian parsley and some oregano)
  • 2+ cups of marinara sauceFirst heat a skillet with olive oil and
  • 3 cloves of crushedgarlic.

Instructions

Brown the chicken only, do not cook completely. Remove chicken from pan and set aside. In the same pan, add several more cloves of crushed garlic, mushrooms, onions, and tomatoes and sauté for about 5 minutes until the onions are soft. Add the chicken back into the pan. Pour the marinara sauce over the chicken and add a dash of salt and pepper. Now lay the yellow and orange bell peppers on top and put a lid on it. Let it simmer for an hour. Take out the chicken and arrange it on a large platter. Spoon the sauce and vegetables over the chicken, and serve over pasta, Buon Appetito!!!

    This is one of my mother’s favorite Italian Recipes, Chicken Cacciatore. Enjoy this wonderful Italian chicken recipe at home. This Italian dish features chicken pieces (such as thighs, legs, breast and wings), tomatoes, onions, bell peppers, olives, mushrooms, and herbs. It's a delicious one-dish meal that can be served over a bed of cooked pasta or rice, and it's perfect for busy weeknights.  The name of this dish comes from the Italian phrase, "alla cacciatora," which means "hunter-style." This hearty and flavorful dish has been enjoyed for generations and is a great way to get a little bit of everything on one plate.
