Nora G's Cucumber Boats & Tomato Wheels

Chef Nora G shows you another way of eating without using sugar or flour
I like to use Skipjack Tuna, as they are smaller fish they taste great as well as collect less mercury over their lifetimes.
Healthy Cucumber Bites and Boats

Ingredients

  • 1 can "Tongol or Skipjack Tuna"
  • 1-2 tbs small celery small diced
  • 1 tbs white or red onion small diced
  • 1-2 tbs mayonnaise with lemon (optional) homemade suggested
  • "Zesty Egg Salad"
  • 6 hard boiled eggs peeled and mashed
  • 2 tbs celery small diced
  • 1 tbs red or white onion small diced
  • black pepper sprinkled
  • 2-4 tbs hummus

Instructions

    Peel medium cucumbers, cut in half and cut into pieces 3 inches long for boats, 1 inch long for bites. Gently scrape out center portion of seeds, leaving some at each end to hold the ingredients. If you have a melon-baller, this works great for the boats. A grapefruit or iced Tea spoon works good for the bites. Fill with Light Tuna Salad, Zesty Egg Salad, hummus or olive tapenade.

Creating little tuna boats with the tomato wheels can be so much fun and this meal is low in salt and doesn't require any sugar or flour.
