Butter Chicken
Ingredients
- 2T butter
- 1T olive oil
- 1 medium onion chopped
- 4 cloves garlic chopped
- 1 tsp fresh ginger/dry use apinch
- 1 1/2 lb chicken cut into 2” pieces
- 4T tomato paste
- 1 T Garam Masala Spice
- 1 cup of half & half low fat or non fat half & half
- 1 tsp chili powder
1 c Quinoa, 2 cups boiling water –
- Rinse Quinoa and strain. Cook to simmer on low heat cover and cook for 15 to 17 minutes until the wateris absorbed
Instructions
Melt butter in a frying pan, add garlic and fresh ginger, and stir until fragrant. Add chopped onion stir until translucent and add tomato paste and stir together. Add cumin, chili powder, and Garam Masala. Once mixed thoroughly, add chicken pieces and saute together until the chicken is cooked. Salt and pepper to taste and add 1 c of half& half. Let simmer for 7-10 minutes and spoon over Quinoa.
