Elbow Macaroni Veggie Casserole

Vito's Elbow Macaroni Veggie Casserole is an incredibly easy and a delicious meal on it's own.

Ingredients

  • 1 lb Elbow macaroni boiled
  • 15 oz Ricotta cheese stirred to make smooth
  • 1 pkg Mushrooms sliced
  • 15 oz Tomatoes diced
  • 1 or 2 Zucchini chopped
  • 1 pkg Mozzarella cheese a generous amount - your choice amount
  • 8 oz Baby Spinach or regular sized leave whole except remove stems
  • 1 pkg Parmesan cheese hearty amount but still your choice
  • Marinara sauce your choice

Instructions

  • Bake at 350 60 minutes covered then at 57 minutes, uncover for 3 mins. Let sit for 30 – 40 minutes, then slice and enjoy!
