Ingredients
7 bunchesflat leaf mustard greens
3 bunchesturnip greens
1 mediumcabbage
3 peppers (green chili, yellow, jalapeño – diced)
8garlic cloves (chopped)
3smoked turkey legs or ham hocks
1Vegetable oil / olive oil
1Vinegar (white or apple cider)
1/4 cupsugar
4 to 8 cupswater or chicken broth
1salt
1Cajun seasoning preferable Tony's
Instructions
Build the flavor base: In a large pot, add onions, peppers, bay leaves, oil, ham hocks, vinegar, sugar, salt, and broth. Let it heat while preparing greens. Taste and adjust seasoning. Prepare the greens: Remove thick stems, wash thoroughly, roll and slice into ribbons. Cook the greens: Add greens in batches, stirring as they wilt. Remove skin from ham hocks if needed and return meat. Simmer: Cover and cook for 1.5 to 2 hours, stirring occasionally until tender.
