Aunt Angie's Sugo All' Arrabbiata Sauce With Fresh Ravioli

A Homemade Sauce From Scratch That You Can Call Your Own!

Ingredients

  • 15 to 20 tomatoes (Roma is suggested) boiled / blanched
  • 1 1/2 cups white onions chopped
  • 3 cloves garlic chopped
  • 3/4 stick butter melted
  • 2 tsp salt
  • 1 to 2 tsp pepper
  • 1/4 cup basil chopped
  • 1/4 tsp red pepper optional
  • 3 to 4 tbs sugar measurement only or sugar substitute
  • 1 to 2 packages Ravioli boiled 4 to 5 minutes
  • 2 to 3 tbs Parmesan Cheese peeled or grated

Instructions

    For making fresh sauce, boil water add a little salt, make cut slices on the tomatoes then add to boiling water until blanched, they will start to peel back at the cuts you put in. Then transfer to iced water and start peeling off the tomato skins (needs a little patience) once that's done blend the tomatoes with any type of blender - in the meantime in a saucepan, melt a little butter with three cloves of garlic add salt & pepper and stir. Then add blended tomatoes to the mix and sauté (add sugar or sugar substitute if you wish). Then add cut basil & a little red peppers if you wish. Be careful how much red pepper you add as they can be hot & spicy. When finish refrigerate if not using. I used Ravioli for this dish, you can use whatever is your choice with the Homemade Sauce (Sugo)
