Vito’s Chicken Marsala

A creamy mushroom delight with mouth watering juicy tender delicious chicken

Ingredients

  • 4 to 5 thinly sliced chicken breasts
  • 1 tub mushrooms sliced
  • 4 garlic cloves diced
  • 1/2 cup Marsala wine
  • 1/4 cup chicken broth
  • 1 Shallot sliced thinly
  • 1 to 4 sprigs of Thyme
  • 1 oz fresh parsley
  • 2 tsp butter
  • 1 all purpose flour for dredging the chicken
  • 1 a little salt & pepper
  • 1 1/4 cup olive oil for sautéing

Instructions

  • Begin by sautéing the shallots and diced garlic and olive oil in a frying pan for about a minute or two over medium flame.
    Next, mix in the mushrooms, add a little salt and a little pepper, and continuously mix for about three minutes to cook evenly.
    Set aside.
    Next Dredge the chicken breasts, one at a time, in the flour until fully coated on both sides, place them in the frying pan, and fry lightly on both sides, flipping them over to cook for another minute or two with a low flame.
    Then add in the Marsala wine and sauteed mushrooms, shallots & garlic to the chicken along with a 1/4 cup of chicken broth.
    While this is cooking, make the roux with equal amounts of butter & flour.
    When all is dissolved together, add in a little chicken broth and continuously stir until well mixed.
    Next add in the roux to the chicken skillet and stir; it will start to thicken.
    Let simmer for another 3 to 4 minutes and serve.
